Apple Pumpkin Soup



mmmmmm mmmmm good. This soup is fantastic and is wonderful for the fall. Another one of my online finds! I love soup in the winter but get bored of soup out of a can.  This was really easy to make and didn't take much prep time at all.

My recipe, adapted from original: 
1 796ml can pumpkin puree (3.25 cups if you want to use real pumpkin)
3 cans chicken or vegetable stock
1/2 cup applesauce
2 granny smith, or other tart apples, diced and peeled
1 small onion, diced
1/2 teaspoon pepper
1/2 teaspoon sage
1/4 teaspoon nutmeg
1/2 teaspoon thyme
1/4 cup brown sugar, packed
1/2 cup 1% Milk

Directions:
1. In a large pot, add diced onion, apples and a bit of water. Saute until onions are translucent. Add chicken broth, apple sauce, and herbs. Bring to a boil and cook until apples are very tender.

Add pumpkin and brown sugar once apples are tender and cook for 10 – 15 minutes over medium heat covered. Use a submersible blender to blend soup or blend the soup in batches on a counter blender until smooth. Add more water if soup is too thick.  Add milk to soup while hot, do not boil. Eat!  (To freeze, let soup cool in the fridge and then move into tupperware to freeze)

This recipe makes 8 cups of soup and is 115 calories/cup. Really low calorie and really delicious.
