Thanksgiving vs. May 24 (Photos!)

I had my dad take some fun photos of Jeff and I at Thanksgiving while we were taking the dock out of the water.

Anyway, this weekend we were putting the dock back in when I realized just how big the same hip waders were on me. So, I had my dad snap some more photos so I could see the comparison when I got home.

Weight Loss at Thanksgiving: 27lbs

Weight Loss at May 24: 54lbs

You can really see the difference between then and now. It's kind of crazy. I don't always see my weight loss but these kinds of photos help me stay motivated to keep it up!

One of the reasons I love Chatelaine magazine is the recipes and I always hope I will get around to making them someday. Well this one I got around to making. It's delicious and I highly recommend it. Tomato Goat Cheese Risotto 2 tbsp light margarine 1/2  white onion, finely chopped 1 cup arborio rice 540 ml can stewed tomatoes 2 cups vegetable broth 1 tbsp dried oregano leaves 1 tsp each of garlic powder, salt and granulated sugar 140g light goat cheese, crumbled  150g package frozen spinach, thawed Directions: Use an oven safe casserole dish with a lid.  Preheat oven to 400*F. Melt margarine in a large pot over medium heat. Add onion and stir often until they are soft. Stir in rice until coated and then the can of tomatoes. Stir often until liquid is almost absorbed.  Then stir in the broth, herbs and sugar. Bring to a boil, stirring often. The ups and downs

I debated whether to blog about this but, I read a quotation the other day that really stuck with me and is a big reason behind why I'm writing this today.  It said: "The reason we struggle with insecurity is because we  compare our behind the scenes with everyone else's highlight reel" With the internet and social media it's very easy to just see everyone's highlight reel, see what they want you to see and really get down about yourself.  So in an effort to be completely transparent and honest about what I'm doing, I will share the good and the bad.  So, here I go.  As I mentioned earlier this week, I really enjoyed our vacation. A lot.  I ate so much fabulous food and was lucky enough to not gain any weight. 30 Day Shred

I'm getting bored with my workout routine lately. Go to the gym, hop on the treadmill or elliptical and then do either chest, back or leg weight lifting.  Throw in a little core on days I'm at the gym longer.  It's becoming really routine.  So, with that I am going to add the 30 Day Shred into the mix. I'm also tired of the exercise I'm doing slowing down my weight loss (I know I know, it's the healthier thing to do and I haven't stopped exercising!) This shred is supposed to boost weight loss. I figure it's worth a shot. A few friends of mine have decided to start the 30 day shred. After some contemplating about whether or not I had enough room in my apartment to actually do the workout I've decided to try it! I got my hands on Levels 1, 2 and 3 and I'm ready.
