Broccoli Brie Soup


I'm doing an Iron Chef challenge with some girlfriends, which has us all cooking something every week with a particular ingredient in it.  This weeks ingredient was brie (which I love! You've all heard about my love affair with cheese.)  I am challenging myself to find a healthy recipe every week (or at least a recipe that can be made skinny) as an additional bonus/challenge for myself.  This will not only let me try different things but incorporate more healthy recipes into my diet.

I found a recipe online for Broccoli Brie soup which I slightly adapted based on making a healthier soup and what I had in the fridge. It turned out great. Even Jeff who isn't a brie lover really liked the soup. You don't need the heavy cream or whole milk to make this soup delicious. 

Ingredients:
  • Two heads of broccoli
  • 1 tablespoon light margarine
  • 1/4 of a medium red onion, chopped
  • 1 clove garlic, grated
  • 2 tablespoons all-purpose flour
  • 2 1/4 cups low-sodium chicken broth (I used Campbell's)
  • 2 1/2  cups 1% milk
  • 175g (6 oz) of light brie (I used Blue Menu)
  • Salt and Pepper to taste
Directions:
Chop up the broccoli florets into pieces. In two batches, run the broccoli through a food processor until finely chopped, set aside. Prepare your onion, dice into small pieces.  In a pot (with a lid) melt margarine and then add onion over medium heat. Cook for about 2 minutes, or until the onion is soft.  Add the broccoli and the grated garlic to the cooked onion and reduce the stove temperature to low-medium.  Add salt and pepper to taste. Cover and let cook for 5 minutes. After 5 minutes, add the all purpose flour, constantly mixing for about a minute, or until well blended. Add the chicken broth and 2 1/4 cups of milk. Let the mixture come to a boil then reduce to a simmer for 15 minutes.  While the soup is simmering, cut the rind off the brie and then chop the brie into small cubes.  Once the liquid has been simmering for 15 minutes, add brie and the remaining 1/4 cup of milk.  Continuously stir until the brie has melted which takes about 2-3 minutes. Serve!

Calories: 215 per serving (recipe makes 4 servings)

I think that next time I make this I'm going to see what it tastes like with goat cheese!
