Nana's Carrot Cake

Last weekend I had a craving for Carrot Cake. Usually I buy it because I was too intimidated to actually bake it but while flipping through the recipe book, sure enough the Carrot Cake was there. I decided, why not give it a try. Worst case is it turns out awful and I buy one at the store. 

Turns out this might be one of the most delicious Carrot Cakes I've ever had the pleasure of eating.  The icing is absolutely to die for (and yes, it might be packed with sugar) 

Now, you don't have to take my word for it's deliciousness as I did share it (because I couldn't eat an entire cake) and it came back with genuine rave reviews and sharing of the recipe. 

This is the Carrot Cake that made me like it in the first place and I see why. My nana had a way with cakes, and an even bigger talent when it came to icing (though I think her secret was don't be shy with the sugar!)  It's nice to know now that I can carry this on and I'm not longer intimidated by making it, I can do it in and it can turn out tasty and delicious. 

Another 10/10. Highly recommend taking some time to make this one! One recipe note, mine backed in 16 minutes. Might have been the shallow pan but definitely check your cake before the timer is up. 

Sam helps me with all my weekend baking now, I don't have to ask. He just willingly and happily comes over and asks to help me.  Today while we baked something else, he said it was his special baking time with Mommy. I love that. Hopefully when he's an adult he will make these same recipes and remember our time together when he was little.

MyFitnessPal

MyFitnessPal is were it all began. Well, kind of. I've been fortunate over the last year and a half of my life to get to know a wonderful group of women through TheKnot.com.  We were all getting married in August 2011 and helped each other with wedding planning. How we all found ourselves on that message board was in my mind a miracle.  We continued to keep in touch and it is because of some of these wonderful women I even heard of MyFitnessPal. After months of seeing some of these women trying it out I started to think about it.  In January 2012 we took a delayed honeymoon and I managed to gain 5lbs in a week.  I guess an all inclusive vacation with fantastic food and drinks will do that to you. Spinach & Ricotta Lasagna Rolls

Lasagna rolls! Surprisingly low calorie and very delicious.  I have two photos above. One of when they were freshly rolled before they went in the freezer and the picture below it when they came out of the oven.  I don't like my lasagna too saucy so feel free to add more but here is the recipe: 5 lasagna noodles, cooked (I used Catelli Smart) 1/4 of a package of frozen spinach, thawed and completely drained 1 Cup Ricotta Cheese 1 egg salt and pepper to taste Mozzarella and Red Sauce to desired amount. Cook the lasagna noodles. While the noodles are cooking, make your filling.  Mix ricotta, spinach and egg, salt and pepper together.  Drain noodles and lay out flat, make sure they are dry. Divide the filling among the 5 noodles.  Then roll.  At this point, I took them and put them in an airtight container and froze them.  To cook them, I took them out of the freezer, put sauce on them and put them in the oven in a pyrex dish for 35 minutes at 375*F.  Then I took them
